Entomophagy

An article in the recent Time magazine discussed the advantages of eating insects as an alternative source of protein. Insects are ubiquitous and very nutritious so perhaps transforming the ick factor into something more positive can prove helpful in answering food crises and saving the planet. Meat production contributes significantly to air emissions so that entomophagy may be truly earth-friendly after all.(image from www.teachersource.com)
Thai cuisine has already been using insects (like crickets and waterbugs) in their dishes, so it wouldn't be surprising if fusion fanatics imbibe this concept. I wouldn't mind eating insect-based dishes, as long as I have complete knowledge of the preparation....and that the insects were farmed.
